  1. Combine flour, baking soda, corn starch and salt in a medium sized bowl.
  2. Mix bananas, brown sugar, turbinado sugar and coconut oil in a large bowl until smooth and thoroughly mixed. Stir in vanilla extract.
  3. Pour dry ingredients into the banana mixture and stir together then fold in vegan chocolate chips.
  4. Optional: Refrigerate dough until ready to use or for 30 minutes if your cookie dough needs firming.
  5. Preheat oven to 375F. Line two cookie sheets with parchment paper (or silicone mats).
  6. Scoop cookie dough onto prepared cookie sheets.
  7. Bake for 8-9 minutes or until they turn light, golden brown.
  8. Cool completely and serve with almond milk!
