Vegan Banana Chocolate Chip Cookies

There is no reason to ever let a ripe banana go to waste. There are just so many things you can do with them! I love to re-purpose them into baking ingredients, smoothies and desserts. I have tried so many great (and not so great) recipes in an attempt to use over-ripe bananas in a pinch.

One of which (my husbands favorite) is banana chocolate chip cookies! I am a sucker for a soft and chewy cookie, even though I don’t have much of a sweet tooth. These cookies work so well for when I’m in the mood for something sweet, but I don’t want to feel like I am making unhealthy decisions.

So simple to make and sooo delicious, these cookies are even vegan! I haven’t tried them with gluten free flour, but I will try that next time and see how they turn out.

Vegan banana chocolate chip cookies
Instructions
  1. Combine flour, baking soda, corn starch and salt in a medium sized bowl.
  2. Mix bananas, brown sugar, turbinado sugar and coconut oil in a large bowl until smooth and thoroughly mixed. Stir in vanilla extract.
  3. Pour dry ingredients into the banana mixture and stir together then fold in vegan chocolate chips.
  4. Optional: Refrigerate dough until ready to use or for 30 minutes if your cookie dough needs firming.
  5. Preheat oven to 375F. Line two cookie sheets with parchment paper (or silicone mats).
  6. Scoop cookie dough onto prepared cookie sheets.
  7. Bake for 8-9 minutes or until they turn light, golden brown.
  8. Cool completely and serve with almond milk!
