Rosemary Lemon Gin Fizz

So, it’s football Sunday. I am not a sports fan, but I support my husband and his team; especially when they make it to the playoffs. What football season typically means is beer and greasy food which, along with football, are some other things I’m not a fan of. If you consider cider to be beer (which I don’t), then you can call me a beer girl… But let’s be real I’m just not a beer girl.

So, that leaves me with wine and cocktails on game days. And although it’s the middle of winter, I have been in the mood for a light refreshing cocktail – something that you can sip on and not feel guilty about or bloated from.

If you don’t already know, I am a huge fan of using what I have laying around in my house. This week it just so happened that I had lots of lemons, some extra fresh rosemary, and of course, plenty of gin! I have never made a cocktail with herbs before, but the subtle rosemary flavor really compliments the floral notes of the gin nicely, and the lemon gave it a pop of bright citrus.

Rosemary Lemon Gin Fizz cocktail

This drink is so fancy looking, but only takes about 10 minutes! You could also easily make a pitcher for a party by scaling the recipe. I think this will be something I make again. Enjoy!

Instructions
Rosemary Simple Syrup
  1. Put honey, 1/4 c. lemon juice and one rosemary sprig into a small pot and bring to a boil.
  1. Combine rosemary simple syrup, gin, club soda and remaining fresh lemon juice and stir.
  2. Pour over ice and garnish with rosemary sprig and lemon slice.
