  1. Combine water and sugar in a small sauce pan over medium heat.
  2. Bring water and sugar to a boil, allowing the sugar to melt and the mixture to thicken.
  3. Coarsely chop the mint to release the oils and add to the pot.
  4. Remove from heat and let the mint “steep” for 10 minutes
  5. Strain the mint from the mixture and pour into a mason jar for storage.
